Cherry Tomato Pasta Sauce



The cherry tomatoes in my garden are going nuts right now, and one of my favorite ways to use a lot of them all at once is to make this really easy pasta sauce! It only takes 40 minutes to make, and is very simple. I got inspiration for the sauce here, but added my own touch to make this sauce both sweet (the cherry tomatoes) and savory (the spices). I hope you like it!


Ingredients
6 cloves garlic, peeled and halved
1 medium onion, cut into 8 pieces
1 tbsp. coconut oil
3 pints cherry tomatoes
1 tsp. dried oregano
1/2 tsp. Italian seasoning
salt & pepper to taste


1. Puree the garlic in a food processor, and then add onion and pulse a few times until finely chopped. 2. Heat coconut oil over medium heat in a large skillet. Add the onion and garlic and cook, stirring occasionally, until softened (about 5 minutes). 3. Meanwhile, place 1 pint of tomatoes in the food processor and pulse until coarsely chopped. Transfer to a bowl and repeat with the remaining two pints. 4. Add the tomatoes to the skillet with oregano and Italian seasoning and simmer for 15-20 minutes, stirring frequently. 5. Add salt and pepper to taste, and serve over pasta. Serves 4.
