The cherry tomatoes in my garden are going nuts right now, and one of my favorite ways to use a lot of them all at once is to make this really easy pasta sauce! It only takes 40 minutes to make, and is very simple. I got inspiration for the sauce here, but added my own touch to make this sauce both sweet (the cherry tomatoes) and savory (the spices). 6 cloves garlic, peeled and halved
1 medium onion, cut into 8 pieces
1 tbsp. coconut oil
3 pints cherry tomatoes
1 tsp. dried oregano
1/2 tsp. Italian seasoning
salt & pepper to taste
